5 Things You Should Know Before Buying Steak Online

Why most online steak disappoints — and what to look for instead

1. Most online steak is pre-cut days before it reaches you.

This is the single most important thing most people don't know. The moment a knife goes through a piece of meat, it begins to deteriorate. Moisture escapes from the exposed surface. Oxidation begins. Flavour starts to fade. Most online butchers cut their stock in advance, refrigerate it, and dispatch it when an order comes in. By the time it reaches your door, that process is already well underway. Always ask — or look for — a butcher who cuts to order.



2. Wet-aged and dry-aged are not the same thing — and the difference is enormous.

Almost all commercially sold beef is wet-aged. This means it sits vacuum-packed in its own juices for a period of time. It tenderises the meat slightly, but it does nothing for flavour. Dry-ageing is a completely different process — the meat is stored in a controlled environment with specific temperature, humidity, and airflow. Moisture evaporates from the muscle, concentrating the flavour. Natural enzymes break down the muscle fibres, transforming the texture. The result is a depth of flavour that wet-aged beef simply cannot produce. If the steak you are buying doesn't specify dry-aged, it almost certainly isn't.



3. The breed of the animal matters more than most people realise.

Not all beef is the same. The breed of the animal, what it eats, how it lives, and how long it is raised all determine the quality of the meat before it ever reaches a butcher. Rare breed cattle — breeds like Longhorn, Hereford, and Dexter — have been raised for flavour, not yield. They grow more slowly, develop more intramuscular fat, and produce a fundamentally different eating experience from the fast-growing commercial breeds that fill supermarket shelves. When you buy steak online, look for a butcher who can tell you exactly what breed it is and where it came from.



4. A great steak needs to rest — and most people don't rest it long enough.

This is the mistake that ruins more good steaks than any other. When you cook a steak, the heat drives the juices toward the centre of the meat. If you cut into it immediately, those juices pour out onto your plate. If you rest it properly — for at least half the time it was cooking — the juices redistribute through the meat and you get a far more flavourful, tender result. A Tomahawk that was cooked for 20 minutes needs at least 10 minutes of rest. A Fillet cooked for 6 minutes needs 3. It feels like a long time. It is always worth it.



5. Internal temperature is the only reliable guide to doneness — not time, not colour, not touch.

Every steak is a different thickness. Every hob runs at a different heat. Every pan retains heat differently. The only way to know exactly what is happening inside the meat is with a probe thermometer. For medium-rare, you are looking for an internal temperature of 52–54°C. Pull the steak off the heat 2–3 degrees before you reach your target — it will continue to rise while it rests. A thermometer costs under £15 and will change every steak you cook for the rest of your life.

Most people have eaten disappointing steak without ever knowing why.

Matteo arrived in London from Biella, Piedmont in 1994 at nineteen years old. He has been here ever since — and a butcher for most of those years.


He learned his craft at Borough Market, working for Silfield Farm — a breeder and butcher from the Lake District with a long-standing reputation for supplying some of London's most respected restaurants, and the Royal Family.


Over years at the counter, he mastered not just how to break down an animal, but how to understand it — how ageing changes a cut, how the breed affects the fat, how the way an animal was raised determines everything you taste.


His speciality has always been large sharing cuts. The T-Bone. The Tomahawk. The Forerib. The cuts that reward patience and proper technique. The cuts that most supermarkets don't bother with and most online butchers handle poorly.


Steak Society is built on everything Matteo learned over 25 years at the block.

Matteo sources exclusively from rare breed, free-range British farms he knows by name. He has visited them. He knows the farmers. He knows the breeds they raise and what those animals eat. When the meat arrives at our ageing room, Matteo and his team take over. Every cut is dry-aged in-house, in a controlled environment that Matteo oversees himself. Temperature. Humidity. Airflow. Duration. Every variable managed, every batch monitored. Nothing is rushed. Nothing is outsourced.


Then at 4am every morning, Matteo is at the block. He cuts and packs every order by hand, working through until the first collection at 8am. Whatever is not ready by 8am goes out on the 12pm run. Orders placed after 12pm are cut fresh the following morning and dispatched on the 8am collection.


It is not a warehouse operation. There is no automated picking line. It is one butcher, starting before dawn, making sure every cut that leaves that room is exactly what it should be.

That is the full picture. That is what Steak Society is. Not a website with a catalogue of cuts. A craft operation, run by a man who has spent 25 years learning how to do this properly — and who is not willing to compromise any part of it.


Every cut we sell is sourced from rare breed, free-range British farms we know by name.
