Dry-ageing is a process where meat is stored in a controlled environment — specific temperature, humidity, and airflow — for an extended period. Over time, moisture evaporates from the muscle, concentrating the flavour, while natural enzymes break down the muscle fibres, making the texture significantly more tender. The result is a depth of flavour and tenderness that fresh or wet-aged meat simply cannot match. At Steak Society, we dry-age everything in-house in our own ageing room, so we control the entire process from start to finish.
