How To Cook Your Lamb Cutlets.
Lamb cutlets are one of the most rewarding cuts to cook — quick, forgiving and spectacular when done right. The key is a screaming hot surface and a short cook time.
Remove from the fridge 30 minutes before cooking.
Allow to come to room temperature. Season generously with flaked sea salt and black pepper. A little crushed garlic and fresh rosemary pressed into the fat works beautifully.
Get your grill or griddle pan extremely hot.
Lamb cutlets should be cooked over direct, intense heat. Place fat-side down first for 1–2 minutes to render the fat and build colour, then sear each flat side for 2–3 minutes depending on thickness.
Target internal temperature: 58–62°C for pink. Lamb cutlets are best served pink — the sweetness of the meat at medium-rare is what makes the cut. Pull them off the heat at 56°C and allow them to rise to temperature while resting.
Rest for 5 minutes
before serving. They do not need long — but resting is not optional.
Serve with roasted vegetables, a mint sauce made from scratch, or simply with lemon and a good extra virgin olive oil.
