The quality of a Fillet starts long before it reaches our ageing room. The tenderloin is a lean muscle, which means it has nowhere to hide — the flavour depends almost entirely on the breed and how the animal was raised.
We source exclusively from rare breed, free-range British farms we trust by name. We know the breed, the feed, and the pasture. Every animal is raised slowly, on natural grass, without growth hormones or unnecessary intervention. Every cut is fully traceable back to the farm it came from.
How To Cook Your Centre Cut Fillet.
The Fillet is the most forgiving cut to cook in terms of technique, but the most unforgiving in terms of temperature. Because it is so lean, there is no fat to protect it — overcook it and it loses everything that makes it special.
Remove from the fridge 45–60 minutes before cooking. Bring it to room temperature. Season generously with flaked sea salt and a little black pepper just before it goes in the pan.
Get your pan extremely hot — cast iron or stainless steel. Add a small amount of a high smoke-point oil. Sear the Fillet for 2–3 minutes on each side depending on thickness, developing a deep brown crust without burning.
Baste with butter, garlic and thyme in the final minute. Then rest the steak for at least half the time it cooked. This is not optional — resting allows the juices to redistribute through the meat.
Target internal temperature: 52–54°C for medium-rare. The Fillet should be eaten pink. Anything beyond medium begins to sacrifice what you paid for.
