How To Cook Your Boneless Pork Loin Roast.
The Pork Loin Roast is a lean cut — the key is cooking it gently enough to retain moisture while building a golden, caramelised exterior. It rewards patience and a probe thermometer.
Remove from the fridge 45–60 minutes before cooking. Allow it to come to room temperature. Season generously with flaked sea salt, black pepper and a little olive oil.
Sear first.
In an oven-proof pan, sear the joint on all sides over high heat until evenly browned. This builds flavour and helps retain moisture during roasting.
Roast at 180°C fan
for approximately 20–25 minutes per 500g, basting once or twice during cooking. The fat layer will render and baste the meat naturally.
Target internal temperature: 68–70°C.
Pull the joint from the oven at 65°C and allow it to rise to temperature while resting. Do not go beyond 72°C or the lean meat will begin to dry out.
Rest for at least 15 minutes
before carving. Resting is not optional — it is where the juices redistribute and the joint firms up enough to slice cleanly.
Serve with roasted root vegetables, apple sauce and a good grain mustard.
